After Thanksgiving Recipe

So you have all that turkey left, what do you do with it, here is one idea and it is easy to make.
Just take
5 cups cooked turkey meat,
chopped
1 cup finely chopped celery
3 tablespoons sweet pickle or relish
1 cup mayonnaise
2 teaspoons salt
2 teaspoons pepper

and then

Prepare in a bowl, mix the turkey meat, celery, pickles or relish, and mayonnaise. Season with salt, and pepper. Put it in the refrigerator until you are ready to use it. This recipe will keep for a few days if the container is sealed properly.

Please share your leftover ideas, does anyone have one for mashed potatoes? I always have them left over and hate to toss them.

It's a big deal for our family to make pierogies so my mom takes all day making the dough and rolling it out, she then uses minced onions and meat tenderizor, with some black pepper and mixes all that in with her left over mashed potatoes then fills the dough and seals it. she'll then put the pierogies in the freezer and they last for a long time. then when you're ready for them just take the frozen pre made pierogies out, boil them, fry them and there you go. you have something that will last you for a while in the freezer :)

Sandwich.

Cheese
Cranberry sauce
Stuffing (or mashed potatoes)--warm first

Yum, Yum, I just pull a slice, toast my bread, put turkey, mayo and pepper on it. Problem is I can't eat just one.
LOL, morning star, that sounds like one mean sandwich, sounds good though. Do you have a name for it? you should name it.
Laura, that is a really good idea for the mashed potatoes, I always wonder what to do with them too, when we were younger our grandmother used to make potato patties out of them, they would have been better with cheese I think, but she never put it in there. She used to make a potato pizza, she would use her left over bread dough, she baked every wednesday. bread dough rolled out, spread the potatoes on it, put cheese on it and bake it. Now a days they call that peorogie pizza, she had been doing that for years.

I just took the bird from the freezer to the refrigerator to make sure it is thawed, hate dealing with a frozen bird, they are like concrete blocks, LOL. Got to dig that junk out that I don't eat.

I also seen on television where they split the breast before cooking the turkey, I am going to do that this year, I should say that I am gonna try anyway.

Morning all...very interesting stuff here! Morningstar, lovin the sammy :) i think it sounds really good but being the person that i am i would have to add gravy too!
Good, very unique ideas for mashed potatoes. i'm always looking for new recipes for our family, seems we eat the same thing all the time though my sister loves mashed potatoes. i'll have to try that pierogi pizza, there's a restaurant here that makes pierogi rolls and man those are so good. they serve them with warm butter, not healthy but very very good.

Thanks for all the ideas on the left over potatoes, I don't know if they would freeze well or not for reuse, has anyone tried this. The perogies and the pizza both sound very good, I know you ladies would come up with something, you are such a creative bunch. I know we used to make potato candy around christmas, it only takes a tablespoon or two of mashed potatoes so not much use there.

You need the following

One around 1/2 cups cooked, mashed potatoes
Two tablespoons Dijon mustard
Around two tablespoons minced fresh dill( this tastes good but not necessary)
Around one teaspoon minced garlic
Half cup finely minced green onion
1 hard-boiled egg, either minced or grated as is possible
salt to taste
A pinch of black pepper
One large egg, beaten
Half cup fine bread crumbs
Little around 2 tablespoons olive oil
A little butter (optional)

Things you need to do:

Put the mashed potatoes in a medium-sized bowl. Add the mustard, dill, garlic, green onion, hard-boiled egg, salt, and pepper. keep mixing until everything is completely blended.

Now break the egg on a plate, and beat it with a fork until it becomes smooth. Now place the bread crumbs on another plate.

Be careful now use your hands (wet them for easier handling...this is how I do) to form the mixture into 3-inch patties, using about 1/4 cup for each.

cautiously dip both sides of each patty in egg and drag them lightly over the bread crumbs to coat on all sides.

Take a frying pan and add the olive oil, wait for about 10 seconds, then swirl to coat the pan. In case you want to, you can also melt in some butter.

When the pan becomes hot enough to sizzle a bread crumb, fry the cutlets about 5 minutes on each side, or until golden and crisp. Remove the cutlets from the pan, and transfer them to a wire rack over a tray to cool. (This retains their crispy texture.)

You can give the topping of sour cream/ chipotle cream/ salsa/ lemon marmalade etc.

So you can get around 8 patties from this :D

Pretty long recipe but its great for snack some day. Its a potato cutlet ;)

You take two tablespoons of mashed potatoes and like three cups of confectioners sugar, you mix it together to create a dough, if you need more tators or sugar, just add as needed. Put some confectioners sugar done on some wax paper, roll out your dough, spread peanut butter or jelly on it or both, once it is spread, roll it up, chill in the refrigerator and then slice and serve. It is an old time recipe, really, really sweet. There is a variety of potato candy for a variety of other recipes like cinnamon and sugar.

These all sound good, did you guys ever hear of putting a bit of cranberry or pineapple in your stuffing? I read it somewhere and was gonna try it this year.

Yes, I have heard of putting fruit and nuts in your stuffing, puts a whole new twist on it. I am keeping mine plain and simple and they have the cranberry sauce on the side if they want to mix it in, they can. Some people don't like the fancy stuff, so better to be safe than sorry and have a whole bunch left over.

You know I took that turkey from the freezer on saturday and it still had ice in it this morning when I put it on, thought it would be completely thawed in the refrigerator for five days.

Believe it or not, still eating them, I am gonna bag what is left and freeze it today, just about turkied out at this point, we will have hot turkey, with gravy and fries some night once some time has passed. For now, it is being put in a freezer bag and out of my sight for awhile, LOL.

Oh good, I know what you mean, my turkey is separated, bagged and frozen for later days too. I so look forward to it, but then it does not take long to just be as you put it, Turkied out!

I will do a ham for christmas and pork for new years and the same scenario will play out, we will pick for a few days and then in the freezer for another day.

The good part is with these meals is that you get so many meals out of them. You can plan for a few weeks later, more or less just warm up, add a different side dish and you are good to go. The hard part is done with the meat.

I have had people tell me they use there left over potatoes by making them into patties and frying them in butter.but here is a recipe for use of turkey.
slow-cooked turkey sandwiches
6 c. cubed cooked turkey
2 c. cubed velveta cheese
1 can (10-3/4 ounces)condensed cream of chicken soup
1 can (10-3/4 ounces)condensed cream of mushroom soup
1/2 cup finely chopped chopped onion
1/2 c. chopped celery
22 wheat sandwich buns split
in a 3 quart slow cooker,combine the first 6 ingrediants.cover and cook on low for 3-4 hours or until onion and celery are tenderand cheese is melted.stir before spooning onto buns
that will make 22 servings its good try it sometime and enjoy.

Do you cook alot crackerjack, you sound like you do alot of down home cooking? Maybe you can have use all over some night for dinner, lol, just kidding. Sounds like you have a houseful and enough to do, enjoy.
