Can collector charge me more than initial debt?

Okay here's what happened, I was involved in a car accident, I was not at fault. Went to see chiropractor, and racked up a bill, turned out the person that hit us, did not have insurance. Okay, so I sued them, we won, but hadn't a clue that just because I won, I'd get paid. Alright, so I waited it out, the chiropractic office sent the bill to collections, I let them know that I was still waiting, well they went ahead and took the bill to court.
They not only put it on my credit report, they put it on my husband's too. I kept calling then, to see if they would take payments, they told me no, all or nothing. I can't afford that. So it's been 3 months, all the while my husband's credit has plunged, I e-mailed and called again, and told them I would be looking for an attorney, they called me the next two days to do a payment plan, I figured okay, I will start paying so our credit can come back up, and if we do have a case against the collection company because 1. they refused to work with me even before the judgement was finalized, 2. they are still charging me for interest, 3. had they worked with me even a month ago my husband's credit wouldn't have been hit this hard causing a big headache. So, since there is a judgement already entered on our credit reports with an amount owed, can the collector still charge me for more even when they can't even tell me how much their "correct amount" is supposed to be? I live in California.
